- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 2 tablespoons olive oil
- 1 tablespoon Texas Roadhouse seasoning (store-bought or homemade)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt (or to taste)
- 2 tablespoons butter
- 1 large onion, thinly sliced
- 8 oz mushrooms, sliced (baby bella or white mushrooms)
- 2 cloves garlic, minced
- ¼ cup beef broth
- 1 cup Monterey Jack cheese, shredded
- 1 cup Cheddar cheese, shredded
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels. If thick, pound to an even thickness of about ¾ inch.
- In a small bowl, mix Texas Roadhouse seasoning, garlic powder, paprika, black pepper, and salt.
- Generously sprinkle the seasoning mixture on both sides of the chicken, pressing gently to adhere.
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Add the seasoned chicken and cook for 3-4 minutes on each side until browned.
- Transfer chicken to a plate. Do not clean the skillet.
- In the same skillet, melt butter over medium heat. Add sliced onions and mushrooms; cook for 6-8 minutes until they soften.
- Add minced garlic and cook for another 30 seconds.
- Pour in beef broth, stir, and scrape up browned bits. Let simmer for 2-3 minutes.
- Return the chicken to the skillet, nestling into the mushroom and onion mixture.
- Mix Monterey Jack and Cheddar cheeses in a bowl, then sprinkle over the chicken and vegetables.
- Transfer skillet to the oven and bake for 10-15 minutes, or until chicken reaches 165°F and cheese is melted.
- Remove from oven, let rest for 5 minutes, and garnish with parsley before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
- This dish can be prepared ahead of time; brown the chicken and prepare the mushroom mixture for easy reheating later.
