Description

A delightful and comforting recipe for Texas Roadhouse Smothered Chicken featuring tender chicken breasts topped with sautéed mushrooms, onions, and a blend of Monterey Jack and Cheddar cheeses.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon Texas Roadhouse seasoning (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (or to taste)
  • 2 tablespoons butter
  • 1 large onion, thinly sliced
  • 8 oz mushrooms, sliced (baby bella or white mushrooms)
  • 2 cloves garlic, minced
  • ¼ cup beef broth
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup Cheddar cheese, shredded
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels. If thick, pound to an even thickness of about ¾ inch.
  2. In a small bowl, mix Texas Roadhouse seasoning, garlic powder, paprika, black pepper, and salt.
  3. Generously sprinkle the seasoning mixture on both sides of the chicken, pressing gently to adhere.
  4. Heat olive oil in a large, oven-safe skillet over medium-high heat. Add the seasoned chicken and cook for 3-4 minutes on each side until browned.
  5. Transfer chicken to a plate. Do not clean the skillet.
  6. In the same skillet, melt butter over medium heat. Add sliced onions and mushrooms; cook for 6-8 minutes until they soften.
  7. Add minced garlic and cook for another 30 seconds.
  8. Pour in beef broth, stir, and scrape up browned bits. Let simmer for 2-3 minutes.
  9. Return the chicken to the skillet, nestling into the mushroom and onion mixture.
  10. Mix Monterey Jack and Cheddar cheeses in a bowl, then sprinkle over the chicken and vegetables.
  11. Transfer skillet to the oven and bake for 10-15 minutes, or until chicken reaches 165°F and cheese is melted.
  12. Remove from oven, let rest for 5 minutes, and garnish with parsley before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • This dish can be prepared ahead of time; brown the chicken and prepare the mushroom mixture for easy reheating later.
