Description

Blueberry Cream Cheese Bread is a quick and simple recipe. It is moist and full of flavor with juicy blueberries. This bread pairs well with coffee or as a snack.


Ingredients

  • 1 cup butter, softened/unsalted
  • 8 oz cream cheese, softened
  • ¾ cup sugar
  • 2 teaspoon vanilla extract
  • 4 eggs
  • 2 cups flour, all-purpose
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups blueberries, fresh, tossed in 1 tablespoon flour

Instructions

  1. Preheat oven to 350 degrees and grease 2 loaf pans (9×5).
  2. In a large bowl, cream together the butter, cream cheese, and sugar.
  3. Add in the vanilla extract and eggs.
  4. Slowly add in the flour, baking powder, and salt.
  5. Once combined, carefully fold in the fresh blueberries.
  6. Pour batter into the prepared pans evenly.
  7. Place into preheated oven and bake for about 50 minutes, or until a toothpick comes out clean.
  8. Remove from oven and allow to cool slightly before removing from the pan and slicing.

Notes

  • Use softened butter and cream cheese for best results.
  • Tossing blueberries in flour helps prevent them from sinking to the bottom.
  • Check for doneness with a toothpick.
