- For the Hamburger Base:
- 2 lbs ground beef (80/20)
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 packet (1 oz) onion soup mix
- 1 can (10.75 oz) cream of mushroom soup
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- For the Cheddar Bay Biscuit Topping:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tbsp granulated sugar
- 1 tsp garlic powder
- 1 tsp dried parsley flakes
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1 1/3 cups buttermilk
- 1/2 cup butter, melted
- 2 cups sharp cheddar cheese, shredded
- For the Garlic Butter Topping:
- 4 tbsp butter, melted
- 2 cloves garlic, minced
- 1/2 tsp dried parsley flakes
- 1/4 tsp garlic powder
Instructions
- Preheat your oven to 425°F. Grease a 9×13 baking dish.
- In a large skillet, brown the ground beef over medium-high heat. Add diced onion and cook until softened. Stir in minced garlic and cook for one minute.
- Stir in the onion soup mix, cream of mushroom soup, frozen vegetables, beef broth, and Worcestershire sauce. Season with salt and pepper. Simmer for 5-7 minutes until slightly thickened. Transfer to the prepared baking dish.
- In a large bowl, whisk together flour, baking powder, sugar, garlic powder, parsley flakes, salt, and onion powder. In another bowl, combine buttermilk and melted butter. Pour wet ingredients into dry and stir until just combined. Fold in 1 1/2 cups of shredded cheddar cheese.
- Drop spoonfuls of the biscuit mixture over the beef mixture. Sprinkle the remaining 1/2 cup of cheese over the top.
- Bake for 20-25 minutes until the biscuit topping is golden brown and cooked through.
- While baking, mix melted butter, minced garlic, parsley, and garlic powder for the topping. Brush over the biscuit tops as soon as the casserole is out of the oven.
- Let rest for 5-10 minutes before serving.
Notes
- Serve with a green salad, steamed broccoli, or green beans.
- Can be made ahead and refrigerated for up to a day. Adjust baking time if starting from cold.
- Leftovers keep for 4-5 days and reheat well.
- For a lighter version, use ground turkey.
