Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream

  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 cup matchstick carrots
  • 1.5 cups macaroni noodles
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded Parmesan cheese

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat until shimmering.
  2. Add ground beef and diced onion; cook until beef is browned and onion is translucent, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle in all-purpose flour and stir continuously for 3 minutes to create a roux.
  5. Slowly pour in chicken broth while stirring to prevent lumps; bring to a gentle simmer for 5 minutes until slightly thickened.
  6. Add heavy cream and stir until combined.
  7. Season with salt, pepper, onion powder, Italian seasoning, and paprika; stir well.
  8. Bring the soup to a boil, then stir in matchstick carrots and macaroni noodles.
  9. Cover, reduce heat to low, and simmer for 20 minutes, stirring occasionally.
  10. Remove from heat and stir in shredded cheddar and Parmesan cheeses until melted.
  11. Ladle the cheeseburger macaroni soup into bowls and serve hot.
