Description

Enjoy these Cheesy Chicken Enchiladas with a rich, creamy sauce. This recipe is a family favorite, featuring tender chicken, melted cheese, and a velvety sauce, perfect for any dinner.

Ingredients

Scale
  • 4 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese, divided
  • 4 oz can mild green chiles, undrained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 810 flour tortillas
  • 1 cup chicken broth or cream of chicken soup
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine shredded chicken, softened cream cheese, sour cream, green chiles, 1 cup cheddar cheese, 1/2 cup Monterey Jack cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Warm tortillas slightly to make them pliable.
  4. Spoon the chicken mixture evenly into each tortilla and roll them up tightly.
  5. Place the rolled enchiladas seam-side down in the prepared baking dish.
  6. In a small bowl, whisk together the remaining sour cream, chicken broth or cream of chicken soup until smooth to create the creamy sauce.
  7. Pour the creamy sauce evenly over the rolled enchiladas.
  8. Sprinkle the remaining cheddar and Monterey Jack cheeses over the top.
  9. Bake for 25-30 minutes, or until bubbly and the cheese is golden.
  10. Garnish with fresh cilantro or green onions before serving, if desired.

Notes

  • Rotisserie chicken is a convenient option for the shredded chicken.
  • For a spicier enchilada, use spicy green chiles.
  • Corn tortillas can be used if warmed first to prevent cracking.
  • Add a dollop of sour cream or a splash of heavy cream to the sauce for extra richness.
  • Consider adding sautéed onions, spinach, or bell peppers to the filling for extra flavor and texture.
