Ingredients

Scale
  • 2 cups mashed potatoes (chilled and firm)
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt, to taste
  • Pepper, to taste
  • 1 cup breadcrumbs (panko or regular)
  • Cooking spray or a little olive oil

Instructions

  1. Prepare the mashed potatoes by ensuring they are chilled and firm.
  2. Mix the chilled mashed potatoes with the shredded cheese, grated Parmesan, beaten egg, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Scoop out small portions of the mixture and roll them into balls about 1-2 inches in diameter. These will be your cheesy potato bites.
  4. Coat each potato ball in breadcrumbs until fully covered, creating crispy mashed potato balls.
  5. Preheat the air fryer to 375°F (190°C) and place the air fryer cheesy potato bites in a single layer in the basket.
  6. Air fry for about 10-12 minutes until golden brown and crispy. This makes delicious homemade air fryer potato croquettes.

Notes

  • Chill the mixture if it feels too soft before forming the mashed potato balls.
  • Don’t skip the breadcrumbs for a crispy exterior on these air fried cheesy potato puffs.
  • Check for doneness as cooking times may vary by air fryer model for these simple air fryer mashed potato balls.
  • Experiment with different dipping sauces for added flavor with your air fryer potato bites with cheese.
