- 12 oz penne or rigatoni
- Salt for pasta water
- 4 slices thick-cut bacon, chopped
- 8 oz Italian sausage, casings removed
- 1 lb large shrimp, peeled and deveined
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1/2 cup white wine or chicken broth
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 1/2 cup shredded mozzarella
- 2 tbsp cream cheese
- Fresh parsley, chopped, for garnish
- Extra parmesan cheese, for garnish
- Lemon wedges, for serving
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water before draining. Set aside.
- In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon, leaving about 2 tbsp of bacon fat in the pan.
- Add Italian sausage to the pan, breaking it up with a spoon. Cook until browned and cooked through. Remove sausage and set aside with the bacon.
- Season shrimp with paprika, garlic powder, salt, and pepper. Cook shrimp in the same pan for 2-3 minutes per side until pink and cooked through. Remove and set aside.
- Add diced onion to the pan and sauté until softened. Add minced garlic and cook for another minute until fragrant.
- Pour in the white wine (or broth) and scrape up any browned bits from the bottom of the pan. Add diced tomatoes, oregano, and red pepper flakes. Simmer for 3-4 minutes.
- Lower heat to medium-low. Stir in heavy cream and cream cheese, whisking until smooth. Add parmesan and mozzarella, stirring until melted and creamy.
- Return bacon, sausage, and shrimp to the pan. Add cooked pasta and toss everything together. Add reserved pasta water a little at a time if the mixture seems too thick, until creamy.
- Taste and adjust seasoning.
- Serve immediately, garnished with fresh parsley and extra parmesan. Serve with lemon wedges.
Notes
- For a spicier dish, add more red pepper flakes or Cajun seasoning to the shrimp.
- You can substitute other cheeses like cheddar or gouda for a different flavor.
- If you don’t have Italian sausage, any spicy sausage will work.
- Leftovers can be stored in the refrigerator for 2-3 days and reheated with a splash of cream or milk.
