Description

Learn how to make delicious chewy homemade granola bars. This easy recipe uses simple ingredients and is perfect for a healthy snack or quick breakfast. Customize them with your favorite additions like nuts, seeds, and dried fruit.

Ingredients

Scale
  • 2 cups old-fashioned rolled oats
  • 1 cup unsweetened peanut butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup mini chocolate chips (optional)
  • 1/4 cup chia seeds or flaxseeds (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup dried fruit, chopped (like cranberries or raisins) (optional)

Instructions

  1. In a large bowl, combine the oats, seeds, and any dry mix-ins like dried fruit or chocolate chips. Stir to combine.
  2. In a microwave-safe bowl, heat the peanut butter and honey (or maple syrup) for 20-30 seconds until melted and easy to stir.
  3. Add the vanilla extract and salt to the peanut butter mixture and stir to combine.
  4. Pour the wet mixture over the dry ingredients and mix until everything is well-coated.
  5. Line an 8×8-inch baking dish with parchment paper.
  6. Press the granola mixture firmly into the prepared dish to help the bars hold together.
  7. Refrigerate for at least 2 hours to allow the bars to set.
  8. Once firm, remove the granola mixture from the dish.
  9. Cut into squares or bars.
  10. Store in an airtight container in the fridge for up to a week.

Notes

  • For a vegan version, use maple syrup or agave syrup and dairy-free chocolate chips.
  • You can substitute peanut butter with almond butter, sun butter, or cashew butter.
  • Press the mixture tightly into the pan and refrigerate for the full 2 hours for firmer bars.
  • Add a scoop of protein powder to the dry ingredients for an extra protein boost.
  • You can skip the chocolate chips and other add-ins for a simpler bar.
