Description

  • 2 cups shredded rotisserie chicken
  • 4 slices cooked bacon
  • 1 medium avocado, sliced
  • 4 slices provolone cheese
  • 1 cup lettuce
  • 1 medium tomato, sliced
  • 1 small red onion, sliced
  • 1 loaf focaccia bread, sliced in half
  • For the Mustard Mayo Sauce:
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon yellow mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the Mustard Mayo: In a small bowl, whisk together mayonnaise, sour cream, and yellow mustard until smooth. Chill while you prepare other ingredients.
  2. Prepare Ingredients: Slice focaccia bread in half. Optionally, toast the bread for 2-3 minutes until golden. Thinly slice the avocado, tomato, and red onion. Shred or pull apart the rotisserie chicken.
  3. Assemble the Sandwich: Spread the mustard mayo sauce on both cut sides of the focaccia halves. Layer provolone cheese, chicken, bacon, lettuce, tomato, onion, and avocado on one half. Season with salt and pepper.
  4. Serve: Place the other focaccia half on top. Slice the sandwich in half and serve immediately.
