Ingredients

  • 3 pounds boneless chicken thighs
  • 23 teaspoons Cajun seasoning
  • 1 tablespoon avocado oil
  • 8 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 stalks celery
  • 5 green onions
  • 6 cloves garlic
  • 3 cups chicken broth (warmed)
  • 1 teaspoon browning sauce
  • ¼ cup parsley leaves
  • Cooked white rice for serving

Instructions

  1. Finely chop onion, bell peppers, celery, green onions, and parsley. Mince garlic. Season chicken with Cajun seasoning.
  2. Heat avocado oil in a large skillet over medium-high heat. Sear chicken thighs until browned, then set aside.
  3. Melt butter in the same skillet over medium heat. Whisk in flour and cook for 10-15 minutes until it reaches a medium brown color.
  4. Add onions, bell peppers, celery, and half the green onions to the roux. Sauté for 10 minutes until softened. Add garlic and cook for 1 minute.
  5. Slowly whisk in warmed chicken broth until smooth. Add browning sauce and the seared chicken. Simmer on low for 30 minutes until thickened and chicken is cooked through.
  6. Remove chicken, chop into bite-sized pieces, and return to the pot. Stir in parsley and more Cajun seasoning if desired.
  7. Serve the chicken étouffée over rice, topped with the remaining green onions.
