A delicious and easy one-pan casserole that combines the flavors of a cheeseburger with the comfort of fluffy biscuits. This Chopped Cheeseburger Biscuit Bake is perfect for a quick weeknight dinner or a crowd-pleasing potluck dish.

- 1 lb ground beef (80/20 blend)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 can (16 oz) refrigerated buttermilk biscuits, cut into quarters
- 1/2 cup dill pickle relish
- 2 cups shredded cheddar cheese, divided
- 1 cup shredded mozzarella cheese
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tsp pickle juice
- 1/2 tsp garlic powder
- Optional toppings: chives, green onions, sesame seeds
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large skillet, cook ground beef and diced onion over medium-high heat until beef is browned and onion is softened, about 6-8 minutes. Drain excess fat.
- Stir in minced garlic, Worcestershire sauce, garlic powder, onion powder, salt, pepper, ketchup, and mustard. Cook for another 2 minutes.
- In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, and garlic powder to create the sauce.
- Place half of the biscuit quarters in the prepared baking dish.
- Spread the cooked beef mixture over the biscuits. Dollop the sauce evenly over the beef.
- Sprinkle the pickle relish and 1 cup of cheddar cheese over the sauce.
- Top with the remaining biscuit quarters.
- Cover the biscuits with the remaining cheddar cheese and all the mozzarella cheese.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for another 15-20 minutes, or until the biscuits are golden brown and the cheese is bubbly and slightly crispy.
- Let the Chopped Cheeseburger Biscuit Bake rest for 5 minutes before serving.
- Garnish with chives or green onions and sesame seeds, if desired.
Notes
- For a spicier version, add diced jalapeños or use pepper jack cheese.
- You can substitute ground turkey for ground beef.
- This dish can be made ahead by browning the beef mixture and assembling the casserole up to 24 hours in advance. Add an extra 10 minutes to the baking time if baking from chilled.
