- 1/2 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- 1/2 small shallot or red onion, minced
- 1 tbsp sugar
- 1 tsp curry powder
- 1/2 tbsp chili powder (optional)
- 1/4 cup oil
- 1.5–2 tbsp vegetarian mushroom oyster sauce
- 1 tbsp dark soy sauce
- 2 tbsp lime juice
Instructions
- Cook the dry noodles in salted boiling water according to package directions, about 2 minutes less than al dente. Drain and rinse under cold water.
- In a heat-proof bowl, combine the chopped cilantro, minced garlic, and shallot or red onion. Stir in the sugar, curry powder, and chili powder.
- Heat the oil in a small pot over medium to medium-high heat until hot and shimmering.
- Carefully pour the hot oil over the cilantro mixture and stir thoroughly.
- Add the vegetarian oyster sauce, dark soy sauce, and fresh lime juice to the bowl. Stir well.
- Toss the cooked noodles into the bowl with the sauce and mix well to coat every strand.
- Taste and adjust seasoning as needed.
- Plate the Cilantro Lime Noodles and garnish with extra cilantro or lime zest if desired.
