Ingredients

  • 1/2 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1/2 small shallot or red onion, minced
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional)
  • 1/4 cup oil
  • 1.52 tbsp vegetarian mushroom oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice

Instructions

  1. Cook the dry noodles in salted boiling water according to package directions, about 2 minutes less than al dente. Drain and rinse under cold water.
  2. In a heat-proof bowl, combine the chopped cilantro, minced garlic, and shallot or red onion. Stir in the sugar, curry powder, and chili powder.
  3. Heat the oil in a small pot over medium to medium-high heat until hot and shimmering.
  4. Carefully pour the hot oil over the cilantro mixture and stir thoroughly.
  5. Add the vegetarian oyster sauce, dark soy sauce, and fresh lime juice to the bowl. Stir well.
  6. Toss the cooked noodles into the bowl with the sauce and mix well to coat every strand.
  7. Taste and adjust seasoning as needed.
  8. Plate the Cilantro Lime Noodles and garnish with extra cilantro or lime zest if desired.
