Description

Ingredients

  • 1 head Cauliflower
  • 8 ounces Fresh Button Mushrooms
  • 2 tablespoons Avocado Oil
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Dry Italian Seasonings
  • 1 tablespoon Fresh Thyme
  • 1 cup Shredded Mozzarella Cheese
  • 2 cloves Garlic

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare two baking sheets with cooking spray.
  2. Slice a large, firm head of cauliflower into 3/4-inch thick steaks and arrange them on the baking sheets.
  3. Coat each cauliflower steak with avocado oil and sprinkle with sea salt, black pepper, and dry Italian seasonings.
  4. Roast the cauliflower steaks for 20-25 minutes, flipping halfway through for even browning.
  5. While the cauliflower is roasting, slice the mushrooms and mince the garlic. Combine with a pinch of salt and pepper.
  6. Spread the mushroom mixture on a second baking sheet and bake for 10-15 minutes or sauté for 5-6 minutes.
  7. Once roasted, top each cauliflower steak with shredded mozzarella cheese and the mushroom-garlic blend.
  8. Return to the oven for an additional 2-3 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh thyme and serve warm.
