  • 34 lb beef chuck roast
  • 2 cups low-sodium beef broth
  • 1 large onion, sliced
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, quartered
  • 34 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp cornstarch (for gravy)

Instructions

  1. Trim excess fat from the beef chuck roast and season generously with salt and pepper. Sear the roast in a skillet over medium-high heat for about 3 minutes on each side until browned.
  2. Transfer the seared roast to a slow cooker. Add onions, carrots, potatoes, garlic, thyme, rosemary, and pour in beef broth until just submerged.
  3. Cover and cook on low for 8 hours or high for 4 hours.
  4. Once cooked, remove the roast and vegetables. Mix cornstarch with cold water until smooth; stir into the broth mixture and cook on high for about 10 minutes until thickened.
  5. Slice or shred the pot roast and serve with gravy over veggies.

Notes

  • For perfect pot roast results, sear meat thoroughly before slow cooking; this enhances flavor.
  • Use a good quality broth for richer gravy.
  • Don’t lift the lid during cooking; keep that heat in!
