  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 6 cups low-sodium chicken broth
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper (to taste)
  • 1 tsp fresh thyme (optional)

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, egg, garlic, parsley, salt, and pepper. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Sauté carrots and celery until softened (about 5 minutes).
