- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 2 tablespoons olive oil
- 1 tablespoon Texas Roadhouse seasoning (store-bought or homemade)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt (or to taste)
- 2 tablespoons butter
- 1 large onion, thinly sliced
- 8 oz mushrooms, sliced (baby bella or white mushrooms work well)
- 2 cloves garlic, minced
- ¼ cup beef broth
- 1 cup Monterey Jack cheese, shredded
- 1 cup Cheddar cheese, shredded
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Pat chicken breasts dry. Pound if needed for even thickness.
- Mix seasoning ingredients and rub onto chicken.
- Sear chicken in olive oil until golden, about 3-4 minutes per side. Set aside.
- In same skillet, sauté onions and mushrooms in butter until soft. Add garlic and cook briefly.
- Add broth, deglaze the pan, and simmer briefly.
- Return chicken to skillet, top with cheese blend, and transfer to oven.
- Bake for 10–15 minutes or until chicken reaches 165°F and cheese is melted.
- Let rest 5 minutes and garnish with parsley before serving.
Notes
- Store in the refrigerator up to 4 days.
- For best results, reheat in the oven.
- Serve with mashed potatoes or green beans.
