Description

This Crockpot Garlic Parmesan Chicken recipe is a simple, flavorful, and comforting meal. Tender chicken thighs and creamy potatoes are slow-cooked in a rich garlic parmesan sauce, making it a perfect ‘set it and forget it’ dish for any occasion. It’s designed for minimal effort and maximum taste.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 2 lbs baby potatoes, halved
  • 1 packet (1 oz) ranch dressing mix
  • 1 packet (1 oz) Italian seasoning mix
  • 1/2 cup chicken broth
  • 1/4 cup butter, melted
  • Salt and pepper to taste
  • 6 cloves garlic, minced
  • 1 cup freshly grated parmesan cheese
  • 1/2 cup heavy cream
  • 2 tbsp cream cheese, softened
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup panko breadcrumbs
  • 2 tbsp butter, melted
  • 1/4 cup extra parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Spray your crockpot with cooking spray. Pat chicken thighs dry and season with salt and pepper. Place chicken in the bottom of the crockpot.
  2. Add halved baby potatoes on top of and around the chicken.
  3. In a medium bowl, whisk together ranch mix, Italian seasoning, chicken broth, melted butter, and minced garlic. Pour this mixture over the chicken and potatoes.
  4. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours.
  5. About 30 minutes before serving, mix heavy cream, cream cheese, 3/4 cup parmesan, oregano, and red pepper flakes in a bowl. Stir this into the crockpot. Cover and cook for another 30 minutes until the sauce is bubbly and the chicken shreds easily.
  6. Optional: Preheat oven to 425°F. Transfer contents to a baking dish, mix panko with melted butter and remaining parmesan, sprinkle on top, and bake for 10-15 minutes until golden.
  7. Sprinkle with fresh parsley and serve immediately.

  • For best results, use chicken thighs as they stay juicier than chicken breasts in a slow cooker.
  • Ensure cream cheese is softened for smooth incorporation into the sauce.
