- 2 lbs boneless, skinless chicken thighs
- 2 lbs baby potatoes, halved
- 1 packet (1 oz) ranch dressing mix
- 1 packet (1 oz) Italian seasoning mix
- 1/2 cup chicken broth
- 1/4 cup butter, melted
- Salt and pepper to taste
- 6 cloves garlic, minced
- 1 cup freshly grated parmesan cheese
- 1/2 cup heavy cream
- 2 tbsp cream cheese, softened
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup panko breadcrumbs
- 2 tbsp butter, melted
- 1/4 cup extra parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Spray your crockpot with cooking spray. Pat chicken thighs dry and season with salt and pepper. Place chicken in the bottom of the crockpot.
- Add halved baby potatoes on top of and around the chicken.
- In a medium bowl, whisk together ranch mix, Italian seasoning, chicken broth, melted butter, and minced garlic. Pour this mixture over the chicken and potatoes.
- Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours.
- About 30 minutes before serving, mix heavy cream, cream cheese, 3/4 cup parmesan, oregano, and red pepper flakes in a bowl. Stir this into the crockpot. Cover and cook for another 30 minutes until the sauce is bubbly and the chicken shreds easily.
- Optional: Preheat oven to 425°F. Transfer contents to a baking dish, mix panko with melted butter and remaining parmesan, sprinkle on top, and bake for 10-15 minutes until golden.
- Sprinkle with fresh parsley and serve immediately.
