Ingredients
Scale
- 1 tablespoon avocado oil
- 1/2 onion, finely chopped
- 2 scallions, white and green parts separated, finely chopped
- 1 cup cremini mushrooms, finely chopped
- 3 cloves garlic, minced
- 2–3 tablespoons red Thai curry paste (adjust to spice preference)
- 1 teaspoon salt
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 can (13.5 oz) full-fat coconut milk
- 1 teaspoon sugar
- 12–15 frozen vegan dumplings
- Optional garnishes: chili oil, scallion greens, crispy garlic, chopped cilantro
Instructions
- Heat avocado oil in a large pot over medium heat.
- Add the chopped onion and the white parts of the scallions. Sauté until softened, about 5 minutes.
- Stir in the finely chopped mushrooms and minced garlic. Cook for another 5 minutes until mushrooms release moisture and soften.
- Add the red curry paste and salt. Stir for 1 minute to bloom the flavors.
- Pour in the vegetable broth, soy sauce, coconut milk, and sugar. Bring the mixture to a simmer.
- Add the frozen vegan dumplings. Cook according to package instructions, typically 7-10 minutes, until tender and heated through.
- Taste the broth and adjust seasoning if needed.
- Serve the curry dumpling soup hot, topped with your favorite garnishes like chili oil, scallion greens, crispy garlic, and cilantro.
Notes
- For a gluten-free version, use gluten-free soy sauce and gluten-free dumplings.
- Adjust the spiciness by varying the amount of red curry paste or omitting chili oil.
- For a lower-fat option, use light coconut milk or a mix of oat milk and broth.
- Add rice noodles or ramen noodles for a heartier meal. Cook noodles separately and add before serving.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop, adding a splash of broth or water if the soup thickens. Avoid boiling to maintain coconut milk texture.
- For freezing, store broth separately and add fresh dumplings when reheating.
