- 4 medium russet potatoes (about 2 pounds)
- 3 tablespoons olive oil
- 4 cloves garlic (minced)
- 2 tablespoons fresh parsley (chopped)
- 1/2 cup freshly grated parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt (plus more to taste)
- 1/4 teaspoon black pepper

Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil and spray lightly with non-stick cooking spray.
- Wash the potatoes thoroughly and pat them dry with paper towels. Leaving the skin on, cut them into 1/4-inch thick sticks.
- Place cut potatoes in a large bowl of cold water and let soak for 30 minutes. After soaking, drain thoroughly and pat completely dry with paper towels.
- In a small bowl, combine the garlic powder, Italian seasoning, paprika, salt, and black pepper.
- Place the dried potato sticks in a large bowl and drizzle with olive oil. Toss until evenly coated.
- Sprinkle the seasoning mixture over the oiled potatoes and toss again until every fry is well-coated with spices.
- Arrange the seasoned potato sticks in a single layer on the prepared baking sheet, making sure they don’t touch or overlap.
- Bake for 15 minutes, then remove from oven and flip each fry. Return to the oven and bake for another 10-15 minutes until golden brown and crispy.
- While the fries are baking, mix the minced fresh garlic with the chopped parsley and grated parmesan cheese in a bowl.
- As soon as the fries come out of the oven, sprinkle them with the garlic-parmesan mixture while they’re still hot.
- Transfer to a serving plate, add additional salt if desired, and serve immediately.
Notes
- For dairy-free/vegan version, use dairy-free parmesan alternative and olive oil spray instead of cooking spray.
- Cut evenly to ensure even cooking; a mandoline slicer works well.
- Soaking and drying the fries thoroughly helps achieve maximum crispiness.
