Description

Crispy on the outside, tender on the inside—these best baked garlic parmesan fries are about to become your new favorite side dish, delivering restaurant-quality flavor without the deep fryer.


Ingredients

  • 4 medium russet potatoes (about 2 pounds)
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 1/2 cup freshly grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • non-stick cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil and spray lightly with non-stick cooking spray.
  2. Wash the potatoes thoroughly and pat them dry with paper towels. Leaving the skin on, cut them into 1/4-inch thick sticks.
  3. Place cut potatoes in a large bowl of cold water and let soak for 30 minutes. After soaking, drain thoroughly and pat completely dry with paper towels.
  4. In a small bowl, combine the garlic powder, Italian seasoning, paprika, salt, and black pepper.
  5. Place the dried potato sticks in a large bowl and drizzle with olive oil. Toss until evenly coated.
  6. Sprinkle the seasoning mixture over the oiled potatoes and toss again until every fry is well-coated with spices.
  7. Arrange the seasoned potato sticks in a single layer on the prepared baking sheet, making sure they don’t touch or overlap.
  8. Bake for 15 minutes, then remove from oven and flip each fry. Return to the oven and bake for another 10-15 minutes until golden brown and crispy.
  9. While the fries are baking, mix the minced fresh garlic with the chopped parsley and grated parmesan cheese in a bowl.
  10. As soon as the fries come out of the oven, sprinkle them with the garlic-parmesan mixture while they’re still hot.
  11. Transfer to a serving plate, add additional salt if desired, and serve immediately.

Notes

  • For dairy-free/vegan version, use dairy-free parmesan alternative and olive oil spray instead of cooking spray.
  • Cut evenly to ensure even cooking; a mandoline slicer works well.
  • Soaking and drying the fries thoroughly helps achieve maximum crispiness.
