Description

  • 1/4 cup water
  • 4 large eggs
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) can evaporated milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the caramel: In a small saucepan, combine sugar and water. Cook over medium heat, stirring until sugar dissolves. Stop stirring and let it simmer until it turns a deep amber color. Carefully pour the hot caramel into a 9-inch round baking dish or individual ramekins. Swirl to coat the bottom.
  3. Prepare the custard: In a blender or bowl, whisk together eggs, sweetened condensed milk, evaporated milk, vanilla extract, and salt until smooth. This will be your flan custard.
  4. Pour the custard mixture over the caramel in the baking dish or ramekins.
  5. Bake in a water bath: Place the baking dish or ramekins in a larger baking pan. Carefully pour hot water into the larger pan, reaching about halfway up the sides of the flan dish.
  6. Bake for 45-60 minutes for a large flan, or 30-40 minutes for individual ramekins, or until a knife inserted near the center comes out clean.
  7. Cool and chill: Remove the flan from the water bath and let it cool completely at room temperature. Then, cover and refrigerate for at least 4 hours, or preferably overnight.
  8. Serve: To unmold, run a thin knife around the edge of the flan. Place a serving plate over the flan dish and carefully invert. The flan should slide out onto the plate with the caramel sauce pooling around it.

Notes

  • For an extra smooth flan, strain the custard mixture before pouring it into the caramel.
  • If you prefer a less sweet flan, you can reduce the amount of sweetened condensed milk slightly.
