Description

  • 6 large flour tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • 2 cups enchilada sauce
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a medium bowl, mix the black beans, 1 cup of shredded cheese, and 1 cup of enchilada sauce until well combined.
  3. Place half a cup of the bean mixture in the center of each tortilla, roll tightly, and place seam-side down in the baking dish.
  4. Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with the remaining cheese.
  5. Cover with aluminum foil and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes until bubbly and golden brown.
  7. Serve topped with sour cream and optional garnishes like cilantro or jalapeños.
