Perfect for lazy weekend mornings or festive gatherings, this casserole is not only easy to prepare but also visually stunning, making it an ideal centerpiece for any brunch table.

Ingredients

Scale
  • 10 large eggs
  • 4 cups cubed English muffins (about 45 muffins)
  • 2 cups whole milk
  • 1.5 cups shredded sharp cheddar cheese
  • 8 oz chopped Canadian bacon
  • 1 cup unsalted butter (for hollandaise sauce)
  • Juice of 1 lemon (for hollandaise sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a deep baking dish with nonstick cooking spray.
  2. In a large bowl, whisk together eggs and milk. Season with salt and pepper to taste.
  3. Add cubed English muffins, Canadian bacon, and cheddar cheese; mix gently until combined.
  4. Pour the mixture evenly into the prepared baking dish.
  5. Bake for 30-35 minutes until puffed and golden brown.
  6. For the hollandaise sauce, melt butter in a saucepan over low heat.
  7. In another bowl, whisk egg yolks and lemon juice until thickened; gradually whisk in melted butter until smooth.
  8. Allow the casserole to cool slightly before slicing.
  9. Drizzle each serving with hollandaise sauce.

Notes

  • For perfectly poached eggs, add a splash of vinegar to the simmering water.
  • Avoid overbaking; keep an eye on your casserole to ensure it stays moist and fluffy.
  • Let it sit for a few minutes after baking for easier slicing.
  • Store any leftovers in an airtight container in the fridge for up to three days.
  • To reheat, pop it back in the oven at 350°F until warmed through.
  • Feel free to swap out ingredients based on what’s in your fridge. Try smoked salmon instead of ham or add spinach.
  • Different cheeses like gouda or feta can also make delightful variations.
