Description
A comforting and decadent twist on classic French onion soup, this French onion soup pasta features rich caramelized onions, creamy cheese, and perfectly cooked pasta for a satisfying meal.
Ingredients
Scale
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1/2 cup dry white wine
- 4 cups beef broth
- 12 ounces pasta (such as fusilli, penne, or rigatoni)
- 1 1/2 cups shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- Optional: 1 teaspoon balsamic vinegar
Instructions
- Heat olive oil and butter in a large skillet or Dutch oven over medium heat.
- Add the thinly sliced yellow onions and cook slowly, stirring occasionally, until deeply golden brown and caramelized, about 30-40 minutes.
- Add the minced garlic and thyme to the skillet and cook for 1 minute more until fragrant.
- Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 1-2 minutes.
- Stir in the beef broth and bring the mixture to a gentle boil.
- Add the pasta directly into the simmering broth. Cook uncovered, stirring occasionally, until the pasta is al dente and the liquid has thickened into a glossy sauce, about 10-15 minutes depending on the pasta shape.
- Remove the skillet from the heat. Stir in the shredded Gruyère and grated Parmesan cheese until melted and the sauce is creamy.
- Taste and season with salt, pepper, and a splash of balsamic vinegar if desired for extra depth.
- Serve the French onion soup pasta warm, garnished with additional cheese or fresh thyme if preferred.
Notes
- For a vegetarian version, substitute vegetable broth for beef broth and ensure your cheese is vegetarian-friendly.
- Short pasta shapes like fusilli, penne, or rigatoni work best for this French onion pasta bake.
- If making ahead, slightly undercook the pasta to prevent it from becoming mushy upon reheating.
- Balsamic vinegar can enhance the sweetness of the onions and add complexity to the sauce.
