Ingredients
Scale
- 1 lb ground beef
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 4 large flour tortillas
- 1/4 cup butter, melted
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- Optional: sliced pickles for garnish
Instructions
- Preheat oven to 375 °F (190 °C) and line a baking sheet with parchment paper or lightly grease it.
- Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks (about 7-8 minutes).
- Stir in Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and black pepper. Remove beef from heat and let it cool slightly.
- Whisk melted butter with minced garlic in a small bowl.
- Lay tortillas flat, evenly spread the beef mixture on each, then top with cheddar and mozzarella cheeses.
- Tightly roll each tortilla, tucking in the sides to keep the filling in place. Position them seam-side down on the baking sheet.
- Brush generously with the garlic butter mixture.
- Bake for 12-15 minutes, until the rollups are golden and the cheese is melted and bubbly.
- Let them cool slightly, slice into pinwheels if desired, garnish with pickles (if using), and serve warm.
Notes
- For a lighter version, substitute ground turkey or ground chicken.
- Swap cheeses like Gruyère, Monterey Jack, or sharp cheddar for different flavors.
- Add diced onions, chopped jalapeños, or bell peppers to the beef for extra flavor and crunch.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the oven at 350 °F to keep them crispy, or use the microwave (texture will soften).
- To prevent soggy tortillas, roll them tightly, brush with garlic butter just before baking, and let them rest on a rack.
- Assemble rollups a few hours in advance and refrigerate before baking.
- These are great for meal prep; reheat a few at a time during the week.
- Large flour tortillas work best for flexibility and holding the filling.
- Freeze baked rollups by wrapping them tightly and storing in a freezer bag; reheat in the oven at 350 °F.
