Description

A quick and flavorful Garlic Chicken Lo Mein Stir Fry recipe featuring tender chicken, crisp vegetables, and savory noodles coated in a rich garlic sauce. Perfect for a weeknight meal.


Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp garlic, minced
  • ½ tsp fresh ginger, minced
  • lbs chicken breast, diced small
  • 1 zucchini, diced small
  • 1 yellow squash, diced small
  • ½ large red bell pepper, diced small
  • 1 cup small chopped broccoli
  • 1 cup sugar snap peas
  • ½ package lo mein noodles
  • For the sauce:
  • 1 Tbsp rice wine mirin or dry sherry
  • 2 tsp brown sugar
  • 2 tsp sesame oil
  • 1 tsp fish sauce
  • ½ tsp soy sauce
  • 1 tsp chili garlic paste or Sriracha sauce
  • 1 Tbsp oyster sauce
  • 2 Tbsp water
  • ½ tsp garlic salt

Instructions

  1. Cook the lo mein noodles according to package directions. Drain and set aside.
  2. In a small bowl, whisk together all the sauce ingredients. Set aside.
  3. Heat a large skillet over medium heat and add olive oil.
  4. Sauté garlic and ginger for 1-2 minutes until fragrant.
  5. Add diced chicken and cook for 2-3 minutes until lightly browned.
  6. Add zucchini, yellow squash, and red bell pepper. Cook until they begin to soften.
  7. Add broccoli and sugar snap peas.
  8. Return cooked noodles to the pan. Pour the sauce over everything.
  9. Toss to coat all ingredients. Cook for another 1-2 minutes until broccoli and peas are crisp-tender.
  10. Serve hot.

Notes

  • For variations, use shrimp, tofu, or thinly sliced beef instead of chicken.
  • Add extra chili garlic paste for more spice.
  • Add mushrooms, baby corn, or shredded cabbage for more crunch and color.
  • If avoiding fish sauce, skip it and add more soy sauce.
  • Leftovers can be stored in airtight containers in the fridge for up to 5 days.
