- 1 box (18.3 oz) fudge brownie mix
- 1/3 cup vegetable oil
- 1/4 cup water
- 2 large eggs
- 1/2 cup mini chocolate chips
- 1 bag (11 oz) soft caramel candies, unwrapped (or 1 cup caramel sauce)
- 3 tbsp heavy cream
- Pinch of sea salt
- 2 cups mini marshmallows
- 1/4 cup mini chocolate chips (for eyes)
- 2 tbsp powdered sugar
- Optional: Extra caramel sauce for drizzling
- Optional: Flaky sea salt for sprinkling
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper and spray with cooking spray.
- In a large bowl, combine the brownie mix, vegetable oil, water, and eggs. Mix according to package directions. Fold in the 1/2 cup mini chocolate chips. Pour the batter into the prepared baking dish and spread evenly.
- If using caramel candies, combine them with heavy cream and a pinch of salt in a microwave-safe bowl. Microwave in 30-second intervals, stirring until smooth and melted. If using caramel sauce, warm it slightly and add a pinch of salt.
- Drop spoonfuls of the caramel mixture over the brownie batter. Use a knife to swirl the caramel into the batter, creating pockets of caramel goodness. Do not overmix.
- Bake for 28-30 minutes, or according to the brownie mix directions, until a toothpick inserted near the center comes out with moist crumbs.
- Immediately after removing the brownies from the oven, scatter the mini marshmallows evenly over the top.
- Return the dish to the oven for 2-3 minutes, or until the marshmallows are puffed and slightly golden.
- Remove from the oven and let the brownies cool for about 10 minutes.
- While the marshmallows are still warm and sticky, gently press two mini chocolate chips into each marshmallow to create eyes.
- Once completely cool, lightly dust the brownies with powdered sugar for an ethereal effect. Drizzle with extra caramel sauce and sprinkle with flaky sea salt, if desired.

- For an adult version, add a splash of bourbon to the caramel mixture.
