Description

Create spooky and delicious Ghostly Caramel Marshmallow Brownies for Halloween. These fudgy brownies feature layers of gooey caramel and are topped with adorable marshmallow ghosts, making them a perfect festive treat.


Ingredients

  • 1 box (18.3 oz) fudge brownie mix
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 2 large eggs
  • 1/2 cup mini chocolate chips
  • 1 bag (11 oz) soft caramel candies, unwrapped (or 1 cup caramel sauce)
  • 3 tbsp heavy cream
  • Pinch of sea salt
  • 2 cups mini marshmallows
  • 1/4 cup mini chocolate chips (for eyes)
  • 2 tbsp powdered sugar
  • Optional: Extra caramel sauce for drizzling
  • Optional: Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper and spray with cooking spray.
  2. In a large bowl, combine the brownie mix, vegetable oil, water, and eggs. Mix according to package directions. Fold in the 1/2 cup mini chocolate chips. Pour the batter into the prepared baking dish and spread evenly.
  3. If using caramel candies, combine them with heavy cream and a pinch of salt in a microwave-safe bowl. Microwave in 30-second intervals, stirring until smooth and melted. If using caramel sauce, warm it slightly and add a pinch of salt.
  4. Drop spoonfuls of the caramel mixture over the brownie batter. Use a knife to swirl the caramel into the batter, creating pockets of caramel goodness. Do not overmix.
  5. Bake for 28-30 minutes, or according to the brownie mix directions, until a toothpick inserted near the center comes out with moist crumbs.
  6. Immediately after removing the brownies from the oven, scatter the mini marshmallows evenly over the top.
  7. Return the dish to the oven for 2-3 minutes, or until the marshmallows are puffed and slightly golden.
  8. Remove from the oven and let the brownies cool for about 10 minutes.
  9. While the marshmallows are still warm and sticky, gently press two mini chocolate chips into each marshmallow to create eyes.
  10. Once completely cool, lightly dust the brownies with powdered sugar for an ethereal effect. Drizzle with extra caramel sauce and sprinkle with flaky sea salt, if desired.
  11. Cut into squares and serve your Ghostly Caramel Marshmallow Brownies.

Notes

  • For an adult version, add a splash of bourbon to the caramel mixture.
  • You can substitute your favorite fudgy brownie recipe for the boxed mix.
