Description

Ingredients

  • 3 ears Corn on the Cob
  • 1 medium Red Bell Pepper
  • 1 medium Jalapeño Pepper
  • 1/2 medium Red Onion
  • 1/4 cup Cilantro
  • 1/2 cup Cotija Cheese
  • 1/2 cup Mayonnaise
  • 1 teaspoon Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Salt
  • 2 tablespoons Lime Juice

Instructions

  1. Preheat your grill to medium-high heat, around 400°F.
  2. Grill the corn for about 6 minutes, turning every 2 minutes until charred.
  3. Remove the corn and let it cool. Cut the kernels off the cobs.
  4. In a bowl, combine the corn, diced bell pepper, sliced jalapeño, red onion, and cilantro.
  5. In a separate bowl, mix mayonnaise, chili powder, smoked paprika, salt, and lime juice.
  6. Pour dressing over salad and gently fold to combine.
  7. Chill for at least 30 minutes before serving.
