Ingredients

  • 6 slices thick-cut bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium russet potatoes, diced
  • 4 cups low-sodium beef broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard

Instructions
