Description

  • 68 day-old croissants, torn into pieces
  • 23 ripe bananas, sliced
  • 4 large eggs
  • 2 cups whole milk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ cup light brown sugar
  • Powdered sugar for dusting (optional)
  • Maple syrup for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Tear the day-old croissants into bite-sized pieces and place them in an even layer at the bottom of the greased baking dish.
  3. Slice the ripe bananas into rounds and sprinkle them generously over the croissant layer.
  4. In a mixing bowl, whisk together the four large eggs, two cups of whole milk, one teaspoon of vanilla extract, one teaspoon of cinnamon, and half a cup of brown sugar until well combined.
  5. Gently pour the custard mixture over the croissant and banana layers in the baking dish. Press down slightly to ensure all pieces are soaked.
  6. Bake in the preheated oven for 30-35 minutes, or until golden brown on top and set in the middle.
  7. Let it cool slightly before serving. Dust with powdered sugar or drizzle with maple syrup if desired.
