- 2–3 ripe bananas, sliced
- 4 large eggs
- 2 cups whole milk
- 1 teaspoon pure vanilla extract

- ½ cup light brown sugar

- Maple syrup for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Tear the day-old croissants into bite-sized pieces and place them in an even layer at the bottom of the greased baking dish.
- Slice the ripe bananas into rounds and sprinkle them generously over the croissant layer.
- In a mixing bowl, whisk together the four large eggs, two cups of whole milk, one teaspoon of vanilla extract, one teaspoon of cinnamon, and half a cup of brown sugar until well combined.
- Gently pour the custard mixture over the croissant and banana layers in the baking dish. Press down slightly to ensure all pieces are soaked.
- Bake in the preheated oven for 30-35 minutes, or until golden brown on top and set in the middle.
- Let it cool slightly before serving. Dust with powdered sugar or drizzle with maple syrup if desired.
