Description

These Brown Butter Sourdough Oatmeal Cookie Bars are a delightful fusion of nutty brown butter, chewy oats, and a hint of tang from sourdough starter. They are irresistibly soft and flavorful, perfect for gatherings or cozy nights in. With an easy preparation process, you’ll find yourself reaching for seconds—or thirds!

Ingredients

Scale
  • 1 cup unsalted butter (browned until golden)
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup sourdough starter (discard is fine)
  • 2 cups rolled oats (old-fashioned)
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • Optional: chocolate chips or nuts to taste

Instructions

  1. Brown the butter in a medium saucepan over medium heat until golden and fragrant, about 5 minutes. Let cool slightly.
  2. In a large mixing bowl, whisk together the browned butter, brown sugar, and granulated sugar until smooth. Add eggs and sourdough starter; mix well.
  3. In another bowl, combine rolled oats, flour, baking powder, baking soda, and salt.
  4. Gradually stir the dry ingredients into the wet mixture until just combined. Fold in optional mix-ins if desired.
  5. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
  6. Spread the batter evenly in the pan.
  7. Bake for 25-30 minutes until lightly golden on top and set in the center.
  8. Allow to cool before cutting into squares.

Notes

  • Use high-quality butter for the best flavor.
  • Do not overmix the batter to ensure a chewy texture.
  • Let the bars cool completely before cutting for clean edges.
  • Store in an airtight container at room temperature for up to five days.
  • Reheat in the microwave for 10-15 seconds for gooey goodness.
  • Can be customized with chocolate chips, nuts, or dried fruit.
  • For gluten-free, use a gluten-free flour blend.
  • For dairy-free, use vegan butter.
