  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Pat the chicken breasts dry and season both sides with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 5-6 minutes on each side until golden brown.
