- 1 cup rolled oats
- 1/2 cup natural almond or peanut butter
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the cottage cheese, nut butter, honey (or maple syrup), egg, and vanilla extract until smooth.
- In another bowl, combine the oats and baking powder. Gradually add this mixture to the wet ingredients and stir until just combined.
- If desired, fold in chocolate chips.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about two inches apart.
- Bake for 15-18 minutes until golden brown around the edges but soft in the center.
- Allow cookies to cool on the baking sheet for five minutes before transferring to wire racks.
