Description

These cottage cheese protein cookies are a delicious and healthy dessert. They are soft, chewy, and packed with protein. Perfect for a post-workout snack or a guilt-free treat.


Ingredients

  • 1 cup low-fat cottage cheese
  • 1 cup rolled oats
  • 1/2 cup natural almond or peanut butter
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the cottage cheese, nut butter, honey (or maple syrup), egg, and vanilla extract until smooth.
  3. In another bowl, combine the oats and baking powder. Gradually add this mixture to the wet ingredients and stir until just combined.
  4. If desired, fold in chocolate chips.
  5. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about two inches apart.
  6. Bake for 15-18 minutes until golden brown around the edges but soft in the center.
  7. Allow cookies to cool on the baking sheet for five minutes before transferring to wire racks.

  • Use low-fat cottage cheese for moisture and protein without excess calories.
  • Rolled oats provide texture and fiber. Quick oats can be used if time is limited.
  • Natural nut butter without added sugars is recommended.
