Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, combine old-fashioned oats, flour, baking soda, cinnamon, and salt. Stir until combined.
- In another large bowl, beat together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, then mix in pumpkin puree and vanilla extract until combined.
- Gradually incorporate your dry ingredients into the wet mixture until fully combined. Do not overmix.
- Drop tablespoons of dough onto prepared baking sheets about two inches apart.

- While the cookies cool slightly, beat together cream cheese with powdered sugar until smooth for the filling.
- Once cooled completely, spread cream cheese filling onto half of the oatmeal cookies and top them with another cookie half to create sandwiches.
