  • 12 oz Italian sausage (mild or spicy)
  • 1 head garlic
  • 8 oz spaghetti or fettuccine
  • 1 cup dry white wine (such as Sauvignon Blanc)
  • 2 tbsp extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • ½ cup heavy cream
  • 2 cups fresh spinach

Instructions

  1. Preheat your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until golden.
  2. In a skillet over medium heat, cook sliced sausage until browned (8-10 minutes). Remove from skillet and set aside.
  3. Boil salted water and cook pasta according to package instructions until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  4. In the same skillet, deglaze with white wine, scraping up browned bits. Whisk in heavy cream.
  5. Squeeze roasted garlic into the sauce along with spinach; stir until wilted.
  6. Add cooked sausage and drained pasta, along with reserved pasta water for consistency.
  7. Serve topped with Parmesan cheese.
