  • 1 lb chicken thighs or beef sirloin, cut into 1-inch cubes
  • 2 tbsp olive oil
  • Wooden or metal skewers
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 1 zucchini, sliced into rounds
  • 1 cup cherry tomatoes
  • 8 oz cheese (pepper jack, cheddar, or Mexican blend), cut into cubes
  • For the Marinade:
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • For Serving:
  • Salsa
  • Guacamole
  • Sour cream
  • Fresh cilantro
  • Lime wedges
  • Hot sauce

Instructions

  1. Marinate the meat: Whisk marinade ingredients. Toss meat cubes in marinade and let sit for at least 30 minutes (up to 4 hours). Prep vegetables while meat marinates.
  2. Prepare the tortillas: Cut each tortilla into 8 triangular wedges. Brush both sides lightly with olive oil and season with salt.
  3. Assemble skewers: Thread tortilla wedges, meat, vegetables, and cheese onto skewers in your desired pattern, leaving space between items for even cooking.
  4. Grill skewers: Preheat grill to medium-high heat. Grill skewers for 12-15 minutes, turning every 3-4 minutes until golden and crispy with char marks, meat is cooked through, and cheese is melted.
