Ingredients
Scale
- 6 large flour tortillas
- 1 lb chicken thighs or beef sirloin, cut into 1-inch cubes
- 2 tbsp olive oil
- Wooden or metal skewers
- 1 red bell pepper, cut into chunks
- 1 red onion, cut into wedges
- 1 zucchini, sliced into rounds
- 1 cup cherry tomatoes
- 8 oz cheese (pepper jack, cheddar, or Mexican blend), cut into cubes
- For the Marinade:
- 3 tbsp olive oil
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
- For Serving:
- Salsa
- Guacamole
- Sour cream
- Fresh cilantro
- Lime wedges
- Hot sauce
Instructions
- Marinate the meat: Whisk marinade ingredients. Toss meat cubes in marinade and let sit for at least 30 minutes (up to 4 hours). Prep vegetables while meat marinates.
- Prepare the tortillas: Cut each tortilla into 8 triangular wedges. Brush both sides lightly with olive oil and season with salt.
- Assemble skewers: Thread tortilla wedges, meat, vegetables, and cheese onto skewers in your desired pattern, leaving space between items for even cooking.
- Grill skewers: Preheat grill to medium-high heat. Grill skewers for 12-15 minutes, turning every 3-4 minutes until golden and crispy with char marks, meat is cooked through, and cheese is melted.
- Serve: Let skewers rest briefly. Arrange on a platter and serve with desired toppings like salsa, guacamole, and sour cream. Squeeze lime wedges over the skewers before serving.
Notes
- If using wooden skewers, soak them in water for at least 30 minutes before use to prevent burning.
- You can customize the vegetable and cheese choices based on your preference.
- For a spicier kick, add jalapeños to the skewers or use pepper jack cheese.
- These skewers can be assembled up to 4 hours in advance and refrigerated.
- Marinade can be made up to 2 days ahead and stored separately.
- Cooked skewers can be stored in the refrigerator for up to 3 days and reheated in the oven or air fryer.
- If you don’t have a grill, use a grill pan, skillet, or bake in the oven at 400°F (200°C) for 15-20 minutes, turning once.
- For oven baking, use a temperature of 425°F (220°C) for 15-18 minutes, flipping halfway through.
- Ensure chicken reaches an internal temperature of 165°F (74°C) and beef reaches at least 145°F (63°C) for medium-rare.
- Raw assembled skewers can be frozen for up to 3 months; thaw overnight before grilling.
- Corn tortillas can be used as an alternative for extra crispiness.
