Ingredients

  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup coconut sugar
  • 1/2 cup coconut oil, melted
  • 1 egg
  • 1/4 cup lemon curd
  • 1 tsp vanilla extract
  • Extra coconut sugar for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix whole wheat flour, almond flour, baking powder, and salt until combined.
  3. In another bowl, whisk melted coconut oil, coconut sugar, egg, lemon curd, and vanilla extract until smooth.
  4. Gradually stir the dry ingredients into the wet mixture until a soft, slightly sticky dough forms. Avoid overmixing.
  5. Use a tablespoon or cookie scoop to form dough balls and place them on the prepared baking sheet, 2 inches apart.
  6. Flatten each ball slightly with the back of a fork.
  7. Bake for 10–12 minutes or until edges are lightly golden.
  8. Remove from oven, sprinkle each cookie with a pinch of coconut sugar, and use a kitchen torch to caramelize the tops.
  9. Let cookies cool slightly before serving.
