- Extra coconut sugar for topping
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix whole wheat flour, almond flour, baking powder, and salt until combined.
- In another bowl, whisk melted coconut oil, coconut sugar, egg, lemon curd, and vanilla extract until smooth.
- Gradually stir the dry ingredients into the wet mixture until a soft, slightly sticky dough forms. Avoid overmixing.
- Use a tablespoon or cookie scoop to form dough balls and place them on the prepared baking sheet, 2 inches apart.
- Flatten each ball slightly with the back of a fork.
- Bake for 10–12 minutes or until edges are lightly golden.
- Remove from oven, sprinkle each cookie with a pinch of coconut sugar, and use a kitchen torch to caramelize the tops.
- Let cookies cool slightly before serving.
