- 3 pounds Boneless Beef Chuck Roast
- 1 teaspoon Salt
- 1 teaspoon Pepper

- 2 tablespoons Italian Seasonings
- 1 teaspoon Onion Powder
- 1 Bay Leaf
- 2 cups Beef Stock
- 1 cup Pepperoncini Peppers, with juice
Instructions
- In a mixing bowl, combine beef stock, pepperoncini peppers with their juice, chopped onion, minced garlic, onion powder, bay leaf, and Italian seasonings. Stir well.
- Cut the beef chuck roast into 6-inch chunks. Season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear beef chunks on all sides for 2-3 minutes until browned. Transfer beef to the slow cooker.
- Pour the seasoned broth mixture over the beef in the slow cooker.
- Cover and cook on low for approximately 6 hours, or until the beef is fork-tender.
- Remove the beef from the slow cooker and place it on a platter. Strain the cooking liquid into a saucepan.
- Simmer the reserved liquid over medium heat until slightly reduced and thickened.
- Shred the beef using two forks. Mix in the softened peppers and onions from the slow cooker.
- Return the shredded beef to the slow cooker and toss with the reduced sauce, or serve the beef topped with the sauce.
