  • 3 pounds Boneless Beef Chuck Roast
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 tablespoon Olive Oil
  • 4 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 2 tablespoons Italian Seasonings
  • 1 teaspoon Onion Powder
  • 1 Bay Leaf
  • 2 cups Beef Stock
  • 1 cup Pepperoncini Peppers, with juice

Instructions

  1. In a mixing bowl, combine beef stock, pepperoncini peppers with their juice, chopped onion, minced garlic, onion powder, bay leaf, and Italian seasonings. Stir well.
  2. Cut the beef chuck roast into 6-inch chunks. Season generously with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear beef chunks on all sides for 2-3 minutes until browned. Transfer beef to the slow cooker.
  4. Pour the seasoned broth mixture over the beef in the slow cooker.
  5. Cover and cook on low for approximately 6 hours, or until the beef is fork-tender.
  6. Remove the beef from the slow cooker and place it on a platter. Strain the cooking liquid into a saucepan.
  7. Simmer the reserved liquid over medium heat until slightly reduced and thickened.
  8. Shred the beef using two forks. Mix in the softened peppers and onions from the slow cooker.
  9. Return the shredded beef to the slow cooker and toss with the reduced sauce, or serve the beef topped with the sauce.
