  • 1 lb lean ground beef
  • 1 cup Italian breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 4 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • 1 tbsp olive oil for sautéing

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, minced garlic, chopped parsley, salt, and pepper. Mix gently until just combined.
  2. Shape into small meatballs about one inch in diameter and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a large pot over medium heat. Sauté diced onions until translucent, then add diced carrots and celery. Cook for about five minutes.
  4. Pour vegetable broth and diced tomatoes (with juice) into the pot. Bring to a simmer for ten minutes.
  5. Gently add meatballs into the soup and cover. Cook on low heat for twenty minutes until meatballs are cooked through.
  6. Stir in heavy cream during the last five minutes of cooking to achieve creamy perfection.
