- 0.5 teaspoon Vanilla Extract
- 65 g Chia Seeds
- 0.5 Pink Dragon Fruit
- 1 large Alphonso Mango
- Optional: Vanilla Coconut Yogurt
- Optional: Chopped Mango for topping
Instructions
- In a mixing jug, whisk together milk, maple syrup, and vanilla extract.
- Gradually add chia seeds, stirring continuously to prevent clumps.
- Let the mixture sit for 4 hours or overnight in the refrigerator, stirring every hour.
- Peel and blend the pink dragon fruit until smooth.
- Stir the dragon fruit puree into the thickened chia pudding until well combined.
- Peel and blend the ripe mango until smooth.
- Layer the dragon fruit chia pudding and mango puree in serving cups.
- Add optional vanilla coconut yogurt and top with chopped mango if desired.
- Serve immediately or store in the refrigerator for up to five days.
