- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced into half-moons
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional, for heat)
- ½ cup shredded mozzarella cheese (or feta)
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Toss chicken, zucchini, tomatoes, onion, and garlic with olive oil and Mediterranean seasoning. Mix well.
- Spread the mixture in the baking dish. Sprinkle mozzarella and Parmesan cheese over the top.
- Cover with foil and bake for 20 minutes. Remove foil and bake for 10-15 minutes, until cheese is golden and chicken is cooked through (165°F/75°C).
- Garnish with parsley and serve warm. Pair with rice, quinoa, or bread.
