Description
A delicious one-pan meal featuring crispy potatoes and sausage, seasoned with ranch and topped with melted cheese, perfect for weeknight dinners.

- 1½ pounds baby red or gold potatoes, quartered
- 1 pound smoked sausage, sliced into rounds
- 2 tablespoons olive oil
- 1 packet (1 oz) dry ranch seasoning
- 2 cups shredded cheddar cheese
- 3 garlic cloves, minced
- 1 bell pepper (any color), diced
- ½ yellow onion, diced
- 1 tablespoon dried parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (205°C). Prep potatoes, sausage, bell pepper, onion, and garlic.
- Toss potatoes with olive oil, half the ranch seasoning, and a pinch of salt and pepper.
- In a separate bowl, toss sausage with remaining ranch seasoning.
- Spread potatoes, sausage, bell pepper, and onion on a parchment-lined baking sheet. Sprinkle minced garlic over.
- Bake for 20 minutes. Stir contents, then bake another 15–20 minutes until potatoes are tender and edges are crispy.
- Sprinkle cheddar cheese over the pan during the last 5 minutes. Bake until cheese is fully melted.
- Garnish with dried parsley and serve immediately.
Notes
- Leftovers keep well in an airtight container in the fridge for up to 4 days.
- For crispier potatoes, soak them in cold water for 30 minutes before baking and pat dry thoroughly.
- Try adding chopped bacon or hot sauce for extra flavor.
