Description

A delicious one-pan meal featuring crispy potatoes and sausage, seasoned with ranch and topped with melted cheese, perfect for weeknight dinners.


Ingredients

  • pounds baby red or gold potatoes, quartered
  • 1 pound smoked sausage, sliced into rounds
  • 2 tablespoons olive oil
  • 1 packet (1 oz) dry ranch seasoning
  • 2 cups shredded cheddar cheese
  • 3 garlic cloves, minced
  • 1 bell pepper (any color), diced
  • ½ yellow onion, diced
  • 1 tablespoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (205°C). Prep potatoes, sausage, bell pepper, onion, and garlic.
  2. Toss potatoes with olive oil, half the ranch seasoning, and a pinch of salt and pepper.
  3. In a separate bowl, toss sausage with remaining ranch seasoning.
  4. Spread potatoes, sausage, bell pepper, and onion on a parchment-lined baking sheet. Sprinkle minced garlic over.
  5. Bake for 20 minutes. Stir contents, then bake another 15–20 minutes until potatoes are tender and edges are crispy.
  6. Sprinkle cheddar cheese over the pan during the last 5 minutes. Bake until cheese is fully melted.
  7. Garnish with dried parsley and serve immediately.

Notes

  • Leftovers keep well in an airtight container in the fridge for up to 4 days.
  • For crispier potatoes, soak them in cold water for 30 minutes before baking and pat dry thoroughly.
  • Try adding chopped bacon or hot sauce for extra flavor.
