- 1 red bell pepper, diced
- 1 yellow bell pepper, diced

- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder (adjust to taste)
- 2 cups chicken broth

Instructions
- Prepare your ingredients by dicing the bell peppers and onion and mincing the garlic.
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt, pepper, cumin, paprika, and chili powder. Sauté until golden brown on both sides (about 5 minutes per side).
- Remove chicken from skillet and set aside.
- In the same skillet, add onion and bell peppers. Sauté until softened (about 5 minutes).
- Stir in long-grain white rice and minced garlic until combined.
- Pour in chicken broth and stir.
- Return chicken to the skillet, nestling it into the rice mixture.
- Bring to a gentle boil then reduce heat to low. Cover tightly and simmer for about 20 minutes until rice is tender.
- Fluff with a fork before garnishing with fresh cilantro if desired.
