Description

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder (adjust to taste)
  • 2 cups chicken broth
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare your ingredients by dicing the bell peppers and onion and mincing the garlic.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season chicken breasts with salt, pepper, cumin, paprika, and chili powder. Sauté until golden brown on both sides (about 5 minutes per side).
  4. Remove chicken from skillet and set aside.
  5. In the same skillet, add onion and bell peppers. Sauté until softened (about 5 minutes).
  6. Stir in long-grain white rice and minced garlic until combined.
  7. Pour in chicken broth and stir.
  8. Return chicken to the skillet, nestling it into the rice mixture.
  9. Bring to a gentle boil then reduce heat to low. Cover tightly and simmer for about 20 minutes until rice is tender.
  10. Fluff with a fork before garnishing with fresh cilantro if desired.
