Description

Ingredients

  • 1 cup shelled pistachios, coarsely chopped
  • 1 tablespoon coarse sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat the butter and sugar together until light and fluffy.
  3. Mix in the honey, egg, and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Gently fold in the chopped pistachios until evenly distributed in the dough.
  7. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Gently press each dough ball with the back of a spoon to flatten slightly.
  9. Bake the cookies for 12-15 minutes, or until the edges are golden brown.
  10. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
  11. While the cookies are still warm, sprinkle the coarse sea salt over the top of each cookie.
  12. For added sweetness, drizzle a little honey over the cookies once they are cool.
