Description

This rustic comfort chicken paprikash delivers soul-warming flavors with tender chicken and a rich, creamy sauce enhanced by sweet Hungarian paprika.


Ingredients

  • 3 pounds bone-in chicken pieces (thighs and legs work best)
  • 2 tablespoons butter
  • 2 large yellow onions, finely diced
  • 3 garlic cloves, minced
  • 3 tablespoons Hungarian sweet paprika
  • ¼ teaspoon cayenne pepper (optional)
  • 1 large ripe tomato, chopped (or 1 tablespoon tomato paste)
  • 1 ½ cups chicken broth
  • ¾ cup sour cream, room temperature
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh chopped parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. Season your chicken pieces generously with salt and pepper, letting them sit at room temperature for 15-20 minutes.
  2. Heat a large pot, add 1 tablespoon butter, and brown the chicken skin-side down for 5-7 minutes until golden. Remove and set aside.
  3. In the same pot, add the remaining butter and sauté the onions for 7-8 minutes until soft, then add garlic and cook for 30 seconds.
  4. Remove from heat, stir in paprika and cayenne, then return to low heat for 30 seconds.
  5. Add chopped tomato and cook for 2 minutes. Pour in chicken broth and bring to a gentle simmer.
  6. Return chicken to the pot, cover partly, and simmer for 30-35 minutes or until the chicken is tender and fully cooked.
  7. In a small bowl, whisk sour cream with flour. Temper with some hot broth, then stir the mixture into the pot. Simmer 5 more minutes until thickened.
  8. Adjust seasoning and garnish with chopped parsley before serving.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days; flavors improve with time.
  • If freezing, do so before adding sour cream. Reheat and stir in the sour cream after thawing for best texture.
