This rustic comfort chicken paprikash delivers soul-warming flavors with tender chicken and a rich, creamy sauce enhanced by sweet Hungarian paprika.

- 3 pounds bone-in chicken pieces (thighs and legs work best)
- 2 tablespoons butter
- 2 large yellow onions, finely diced
- 3 garlic cloves, minced
- 3 tablespoons Hungarian sweet paprika
- ¼ teaspoon cayenne pepper (optional)
- 1 large ripe tomato, chopped (or 1 tablespoon tomato paste)
- 1 ½ cups chicken broth
- ¾ cup sour cream, room temperature
- 2 tablespoons all-purpose flour
- 1 tablespoon fresh chopped parsley
- Salt and freshly ground black pepper to taste
Instructions
- Season your chicken pieces generously with salt and pepper, letting them sit at room temperature for 15-20 minutes.
- Heat a large pot, add 1 tablespoon butter, and brown the chicken skin-side down for 5-7 minutes until golden. Remove and set aside.
- In the same pot, add the remaining butter and sauté the onions for 7-8 minutes until soft, then add garlic and cook for 30 seconds.
- Remove from heat, stir in paprika and cayenne, then return to low heat for 30 seconds.
- Add chopped tomato and cook for 2 minutes. Pour in chicken broth and bring to a gentle simmer.
- Return chicken to the pot, cover partly, and simmer for 30-35 minutes or until the chicken is tender and fully cooked.
- In a small bowl, whisk sour cream with flour. Temper with some hot broth, then stir the mixture into the pot. Simmer 5 more minutes until thickened.
- Adjust seasoning and garnish with chopped parsley before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days; flavors improve with time.
- If freezing, do so before adding sour cream. Reheat and stir in the sour cream after thawing for best texture.
