Description

A delicious Samoas cookie pie recipe that mimics the popular Girl Scout cookie. This easy-to-make dessert features a chewy cookie crust topped with chocolate chips, coconut, caramel, and a chocolate drizzle.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips
  • 1 1/2 cups sweetened shredded coconut
  • 2/3 cup sweetened condensed milk
  • 45 ounces salted caramel sauce
  • 3/4 cup semi-sweet chocolate chips, melted for drizzling

Instructions

  1. Preheat oven to 350F. Spray a 9-inch pie dish with cooking spray.
  2. Melt butter in a microwave-safe bowl.
  3. Add egg, brown sugar, and vanilla. Whisk until smooth.
  4. Add flour and salt. Stir until just combined.
  5. Spread batter into the prepared pie dish. Bake for 10-12 minutes until edges are firm.
  6. Remove from oven. Sprinkle 3/4 cup chocolate chips over the crust.
  7. Sprinkle coconut evenly over the chocolate chips.
  8. Drizzle sweetened condensed milk over the coconut.
  9. Drizzle caramel sauce over the condensed milk.
  10. Return pie to oven. Bake for 25 minutes until the edges bubble and the center is set. Watch carefully to prevent burning.
  11. Remove from oven. Melt 3/4 cup chocolate chips for drizzling.
  12. Drizzle melted chocolate over the pie.
  13. Cool pie for at least 4 hours before slicing and serving.

Notes

  • For a decorative chocolate drizzle, use a pastry bag or a zip-top bag with a corner cut off.
  • The pie needs to cool completely for the chocolate drizzle to set and the interior to firm up.
