- 1 lb breakfast sausage
- 12 large eggs
- 1 cup whole milk
- 8 oz cream cheese, cubed and softened
- 2 cups shredded sharp cheddar cheese
- 1/2 cup green onions, chopped
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1 red bell pepper, diced (optional)
- 4 oz mushrooms, sliced (optional)
- 2 tbsp butter (optional, for sautéing veggies)
- 1/4 cup fresh chives, chopped (for topping)
- 1/2 cup extra cheddar cheese (for topping)
- Hot sauce (for topping, optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish. If using bell peppers or mushrooms, sauté them in butter until soft and set aside.
- In a large skillet over medium-high heat, cook the breakfast sausage, breaking it up, until browned and cooked through. Drain excess grease.
- In a large bowl, whisk together the eggs and milk until smooth. Add the softened cream cheese and whisk until mostly combined. Season with garlic powder, onion powder, salt, and pepper. Stir in 1 1/2 cups of shredded cheddar cheese and most of the green onions.
- Add the cooked sausage and sautéed vegetables (if using) to the egg mixture. Stir to combine evenly.
- Pour the mixture into the prepared baking dish. Top with the remaining 1/2 cup of cheddar cheese.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the center is set and the top is lightly golden.
- Let the sausage egg cream cheese casserole rest for 5-10 minutes before serving.
- Garnish with fresh chives, remaining green onions, and hot sauce if desired.
Notes
- This casserole can be assembled the night before and refrigerated. Add 10-15 minutes to the baking time if baking from cold.
