Description

A comforting and flavorful savory French onion pot roast, featuring tender beef and caramelized onions in a rich gravy.


Ingredients

  • 34 pound chuck roast
  • 2 large yellow onions, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 2 bay leaves
  • 2 tablespoons olive oil or butter
  • Salt and black pepper to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)

Instructions

  1. Season the chuck roast generously with salt and pepper.
  2. Heat olive oil or butter in a Dutch oven over medium-high heat. Sear the roast on all sides until golden brown. Remove the roast and set aside.
  3. Add sliced onions to the same pot and cook slowly until caramelized and golden brown, about 20-30 minutes.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Deglaze the pot with a splash of beef broth, scraping up any browned bits from the bottom.
  6. Return the roast to the pot. Add the remaining beef broth, Worcestershire sauce, fresh thyme, rosemary, and bay leaves.
  7. Bring to a simmer, then cover the pot tightly.
  8. Transfer to a preheated oven at 325°F (160°C) and cook for 3 to 3.5 hours, or until the beef is fork-tender.
  9. Optional: If you prefer a thicker gravy, remove the roast from the pot. Whisk together 2 tablespoons of flour with 1/4 cup of water to make a slurry. Stir the slurry into the pot and simmer until the gravy thickens.
  10. Serve the savory French onion pot roast with the gravy spooned over.

Notes

  • For a sweeter sauce, add a splash of balsamic vinegar.
  • Mushrooms can be added with the onions for extra flavor.
  • Dried thyme and rosemary can be substituted for fresh herbs.
  • This recipe can be made in a slow cooker by following the searing and onion steps, then cooking on low for 8 hours or high for 4-5 hours.
