- 3–4 pound chuck roast
- 2 large yellow onions, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1/4 cup Worcestershire sauce
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
- 2 bay leaves
- 2 tablespoons olive oil or butter
- Salt and black pepper to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
Instructions
- Season the chuck roast generously with salt and pepper.
- Heat olive oil or butter in a Dutch oven over medium-high heat. Sear the roast on all sides until golden brown. Remove the roast and set aside.
- Add sliced onions to the same pot and cook slowly until caramelized and golden brown, about 20-30 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Deglaze the pot with a splash of beef broth, scraping up any browned bits from the bottom.
- Return the roast to the pot. Add the remaining beef broth, Worcestershire sauce, fresh thyme, rosemary, and bay leaves.
- Bring to a simmer, then cover the pot tightly.
- Transfer to a preheated oven at 325°F (160°C) and cook for 3 to 3.5 hours, or until the beef is fork-tender.
- Optional: If you prefer a thicker gravy, remove the roast from the pot. Whisk together 2 tablespoons of flour with 1/4 cup of water to make a slurry. Stir the slurry into the pot and simmer until the gravy thickens.
- Serve the savory French onion pot roast with the gravy spooned over.
Notes
- For a sweeter sauce, add a splash of balsamic vinegar.
- Mushrooms can be added with the onions for extra flavor.
- Dried thyme and rosemary can be substituted for fresh herbs.
- This recipe can be made in a slow cooker by following the searing and onion steps, then cooking on low for 8 hours or high for 4-5 hours.
