Ingredients

  • 4 boneless, skinless chicken breasts
  • 200 grams of feta cheese, crumbled
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine

Instructions

  1. Preheat the oven to 375°F (190°C) for even cooking.
  2. In a bowl, combine the crumbled feta cheese, chopped spinach, minced garlic, dried oregano, salt, and pepper.
  3. Place each chicken breast between two sheets of plastic wrap and gently pound with a meat mallet until evenly flattened.
  4. Spoon the feta mixture onto each chicken breast, then roll them up tightly. Secure with toothpicks or kitchen twine.
  5. Heat the olive oil in a skillet over medium-high heat. Sear the chicken rolls for 3–4 minutes on each side until golden brown.
  6. Transfer the seared chicken rolls to a baking dish and bake for 25–30 minutes, or until the chicken is fully cooked.
