Description

  • For the Potatoes:
  • 2 lbs Yukon Gold potatoes, diced into 3/4-inch cubes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • For the Cheesesteak Mixture:
  • 1 1/2 lbs ribeye or sirloin steak, sliced thin against the grain
  • 2 large onions, sliced thick
  • 2 bell peppers (green and red), sliced thick
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • For the Cheese Situation:
  • 8 oz provolone cheese, sliced or shredded
  • 8 oz American cheese, sliced or cubed
  • 1/2 cup shredded sharp cheddar
  • For Finishing:
  • 2 green onions, chopped
  • Fresh parsley for garnish
  • Hot sauce or banana peppers (optional)

Instructions

  1. Preheat your oven to 425°F. Wash and dice potatoes into 3/4-inch cubes. Toss potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper in a large bowl until evenly coated. Spread on a large baking sheet in a single layer. Roast for 25-30 minutes, flipping once halfway through, until golden brown and crispy.
  2. While potatoes roast, slice steak thin against the grain. Season with salt, pepper, and oregano.
  3. Heat 2 tbsp olive oil in a large cast-iron skillet over medium-high heat. Add sliced onions and cook for 5-6 minutes until softened. Add bell peppers and cook for another 5-6 minutes until tender. Add garlic and cook for 1 minute until fragrant. Remove vegetables to a plate.
  4. In the same skillet, add butter. Add seasoned steak in a single layer. Cook for 2-3 minutes without stirring, then stir and cook another 2-3 minutes until cooked through. Add Worcestershire sauce and stir.
  5. Add the roasted potatoes to the skillet with the steak. Top with the caramelized onions and peppers. Layer the cheeses over everything.
  6. Pop the skillet in the oven for 5-7 minutes until the cheese is melted and bubbly.
  7. Garnish with chopped green onions and fresh parsley. Serve family-style right from the sizzling skillet.

Notes

  • Always use a trivet or cutting board to protect your surfaces from the hot skillet.
  • Inform your guests that the skillet is extremely hot.
  • Serve with optional hot sauce or banana peppers.
  • Consider serving with a side salad, crusty rolls, cold beer, or coleslaw for a complete meal.
