  • 2 cups buttermilk
  • 1 tablespoon hot sauce (optional)
  • 2 cups all-purpose flour
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (or to taste)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Vegetable oil, for frying

Instructions

  1. Combine buttermilk and hot sauce (if using) in a large bowl. Add chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or preferably overnight.
  2. In another bowl, mix together flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper.
  3. Remove chicken from buttermilk, letting excess drip off. Dredge each piece in the seasoned flour mixture, pressing lightly to coat. Shake off excess flour.
  4. Heat about 2 inches of vegetable oil in a large skillet or deep fryer over medium-high heat until it reaches 350°F (175°C).
  5. Carefully add chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry for 12-15 minutes, turning occasionally, until golden brown and the internal temperature reaches 165°F (74°C).
  6. Remove chicken from oil and place on a wire rack or paper towels to drain excess oil. Let rest for a few minutes before serving.
